A fairly “witty” beer with wheat accounting for 12% of the malt bill, this saison is unmistakably reminiscent of homemade cornbread: charred crust with a moist center and a touch of sweetness that enhances the vegetal flavors. Thank to the Belle yeast, a house favorite, this brilliantly blonde beauty has a dry finish is paired best with adjacent sweet, dry, and maillard notes or a complimentary refreshing fruit or vegetable. The cucumber accents the saison in such a way that the dryness of the gin and the smoky nature of the charred oak are able to complete the flavor experience gracefully.
